Meet Our Staff

Jessie Hopkins

Jessica Hopkins is a legal assistant with Jones & Sasnett, P.A. Her primary responsibilities currently include assisting with real estate closings, deed preparation and wills and estates. A native of eastern North Carolina, Jessie was born in Greenville, North Carolina and resided in Martin County before making her home in Belhaven, North Carolina.

Jessie worked for more than a decade as an EMT and later as an administrative assistant in a physician’s office. Always active within her community, she volunteered with the local fire department and rescue squad. She joined our firm as an administrative assistant, then became a legal assistant with our criminal defense and family law areas of practice. She now works within the firm’s real estate practice area as a legal assistant where she coordinates the real estate transaction from contract to post-closing. 

Her calm and organized approach is an asset to our firm and clients. Jessie resides in Belhaven, North Carolina with her husband, George.

Sarah Elks

Sarah Elks is a legal assistant with Jones & Sasnett, P.A. and assists the firm in several areas including criminal and traffic defense and family law.


A life-long resident of eastern North Carolina, Sarah graduated from D.H. Conley and completed an Associate of Science degree at Pitt Community College. Sarah continued her undergraduate studies at North Carolina Wesleyan University where she earned a Bachelor of Science degree in Criminal Justice with a minor in Leadership. She brings great energy when helping our clients and staff.


Sarah resides in Greenville, North Carolina with her pup, Tucker, and her fiancé.

Destine Wilson

Destine Wilson is a legal assistant with Jones & Sasnett, P.A. and coordinates intake and scheduling services for our staff and clients. She also assists our criminal and traffic defense practice.


Growing up in Pitt County, she graduated from D.H. Conley and attended the Paralegal Technology Program at Pitt Community College. She completed her undergraduate studies at the University of North Carolina Pembroke with a Bachelor of Arts and Science degree in Criminal Justice and is a graduate student at East Carolina University in Technical and Professional Communication. Her passion for helping people in her past work as a child program assistant and art teacher continues as a valued member of our team.


Destine resides in Wilmington, North Carolina.
